Chocolate cake is tasty and I thought we could try it out, not everyday vanilla. So first we get this ingredients and second we do the thing.
*175g double cream
*50g cocoa powder
*225g soft dark brown sugar
*1 vanilla pod, seeds scraped out
*75g plain chocolate
*100g butter unsalted
*2 eggs separated
*50g ground almonds
*175g plain flour
*2 tsp baking powder
FOR SIMPLE ICING
*A few tsp boiling water, enough to set a thick paste
*200g icing sugar sifted
Crushed amaretti biscuits and icing sugar.
*Preheat the oven to 180•c/gas mark 4. In a sauce pan bring the cream, cocoa, sugar and vanilla to the boil. Place the chocolate and butter in a bowl, and pour the hot cream mixture over. Mix to combine, then leave to cool for 5mins.
*Meanwhile in a clean bowl beat the egg whites into soft peaks.
*Add the almonds, flour, baking powder and egg yolks to the cooled chocolate mixture, then gently fold in the whites.
*Spoon into the holes of a 12-hole cupcake tin and bake for 15-20mins. Allow to cool on a wire rack.
*For the icing, gradually whisk the water into the icing. Spread onto the cooled cakes and top with crushed amaretti biscuits and a sprinkle of icing sugar.
*Remember practice makes perfect, there ain't any perfect thing in the world rather it gets better.*
